Apicius, Week 2
This week was...Trentino. Way up in northern Italy, Trentino is known for hearty, cured meats and rich desserts. And thus the menu for this week was:
Manzo con Lardo e Rosemaria
Canederli is my new love. Cured meat, parsley, bread and onions in dumpling form…there really is nothing better. The manzo con lardo, I could take it or leave it. Same with the strudel. But—oh. my. god. The canederli were pure heaven.
I can’t wait to cook when I get home!
